You need one for Bank accounts, Credit Cards, Insurances, ...
Presumably you came here to work (and work hard, and get paid), thus you have to get a Social Security Number. However, your spouse (if you have one) may decide not to work. If you ask for a SSN for him/her for convenience, the probability is high that you will be told you do not need a SSN for your spouse. (As a general rule, administrations never do anything for you just for your convenience.) Alas, you will notice that everybody is going to ask for a SSN (banks, insurance, etc., and if your spouse decide to work later, a SSN is mandatory). At one time it was necessary to get an SSN in some states to get a drivers license, but that seems to be no longer the case.
Also, people on tourist visas (boy/girlfriends) will never get an SSN, no matter what. If you have kids, the only reason for them to obtain a SSN (I assume they are not yet working or driving) is if you find a way to claim a tax exemption (allowance) for your kids or if you need the SSN for health insurance reasons (if you insists you can usually get by without, but some insurance carriers are annoying.
